BLINIS WITH CREAM CHEESE, TAMARI SEEDS AND HEART BEET KRAUT

These delicious bite-sized blinis are the perfect combination of tanginess, creaminess and umami which will keep your guests coming back for more. They also look fabulous on a plate with their bright beet-red colour!

INGREDIENTS
200g cream cheese
2 tablespoons milk
¼ cup pumpkin seeds
1 teaspoon tamari (or light soy sauce)
1 x jar Living Goodness Heart Beet Kraut
1 x packet Marcel’s Fancy Blinis
Finely chopped chives to serve

METHOD
• Put the cream cheese and the milk into a little food processor or into the vessel that comes with your stick blender and blend until smooth.
• Put the pumpkin seeds into a heavy-bottomed frying pan and over a medium-high heat toast until golden brown and crunchy – this will take around 5 minutes. Pour the tamari over the seeds and stir well.
• Arrange 25 blinis on a large plate or platter.
• Top each one with a teaspoonful of the cream cheese, followed by another teaspoonful of the Heart Beet Kraut.
• Top with a sprinkling of pumpkin seeds followed by some chives and serve.
