Over the years we’ve created a lot of sauerkraut for hungry New Zealander’s and we’ve noticed that those same hungry Kiwi’s have a lot of questions about kraut and kimchi.
We’re here to clear the air on some of your most
‘Frequently Asked Questions’.

 

How long does your sauerkraut last when the jar is opened?

When kept in the fridge your krauts should last around 3-4 months once opened, but keep in mind that clean utensils must be used each time so no bad bacteria can get in and contaminate the contents.

How long does your sauerkraut last unopened?

Our products have a shelf life of between 4 and 6 months – this is when they are at their yummiest – please check the bottom of you jar for the best before.

My jar didn’t pop open like a jam jar – is this safe to eat?

Because we don’t heat treat our products to keep the beneficial bacteria alive, your jar wont ‘POP’ like a jam jar, but the contents are safe to eat.

Are your products pasteurised?

No, we don’t pasteurise / heat treat any of our products, as any heating of fermented foods can kill the good bacteria.

Are non-pasteurised sauerkrauts safe to eat?

Absolutely! All our products must be below a certain pH level, below this it’s difficult for bad bacteria to survive. We also have a quarterly testing procedure where we test a different flavour for any bad bacteria such as listeria or e coli. If you’d like more details please contact us directly.

Does eating sauerkraut give you gas?

That all depends on the person. For some people that are new to fermented foods or who have sensitive systems it can, generally this will lessen with time. But everybody just like every digestive system is different so treat it gently.

Do you use vinegar to make sauerkraut?

No, we use Himalayan salt to ferment the vegetables – that’s all it needs! 

Are your products Vegan?

We offer five flavoursome Vegan krauts – Sassy Sauerkraut, Heartbeet Kraut, Quick Draw Slaw, Super Superkraut and Naked Sauerkraut.

Are your products Gluten Free?

Yes! All our products are Gluten Free.

Is it normal for the contents to explode when opening? 

No, generally if you have kraut or kimchi growing out of the jar it means you have a particularly lively batch. Normally the bacteria will go to sleep in the fridge and come alive again in your digestion. However sometimes for no particular reason the jar will continue to ferment and gas builds up in the jar. Which means as soon as it’s provided a means to escape its off.

What should my kraut look, taste, and smell like?

Kraut & kimchi have a sour tangy flavour and can have a strong pungent smell.

There is cloudy liquid in my jar, is this safe to consume?

Yes! This is amazing probiotic juice – why not try make vinaigrette from this liquid gold? This stuff is good gut magic!

What kind of probiotics are in Living Goodness Sauerkraut?

We use a vegetable culture starter from Body Ecology that has 3 strains of bacteria; Lactobacillus plantarum, pediococcus acidlactici and leu. Cremoris. We also add inulin in the form of chicory root extract or Ecobloom which helps these bacteria breed by acting as their food.

Are your Krauts and Kimchi organic?

No, our krauts and Kimchi are not organic, it’s hard to get enough truly organic cabbages – however we use all fresh New Zealand grown produce.
