FOCACCIA REUBEN SANDWICH
A quick and easy Reuben pickle sandwich.

INGREDIENTS
Large focaccia loaf
50g butter room temperature)
Small bunch of parsley finely chopped
2 anchovies finely chopped
Swiss cheese
Pickles
Pastrami
Living Goodness Heartbeet Kraut
Black pepper freshly cracked
METHOD
• In a small bowl, mix together the butter, parsley, anchovies and black pepper until well-combined.
• Cut the focaccia into sandwich sized pieces and slice each in half horizontally. Generously spread the butter mixture on the bottom half of the focaccia.
• Lay over a couple slices of Swiss cheese on top of the buttered side and bake in the oven at 180 °C for about 3 minutes (just until the cheese has melted).
• Remove from the oven and then layer over thinly sliced pickles, pastrami and plenty of Heart Beet Kraut.
• Place the top half of the focaccia on, slice in half and enjoy!
NOTE
• Quantities are dependent on how loaded you like your sandwich!
