SUM YUM KIMCHI AND FETA VEGAN PASTRIES

Light and fluffy hors d’oeuvres to wow friends at your next party. Or simply indulge yourself (and maybe a friend) with this tasty easy to make little pastry.

INGREDIENTS
2 sheets of vegan puff pastry, (cut into 12 circles, approx 10cm in diameter)
¼ cup Living Goodness Sum Yum Kimchi (or more if you’d like)
24 x 1cm cubes of Angel Food Feta
¼ cup plant milk
1 teaspoon maple syrup

METHOD
• Preheat the oven to 180 degrees Celsius.
• Grease a muffin tray and fit your 12 rounds of pastry into each hole to make little cups.
• Mix together milk and maple syrup in a small bowl and brush mixture lightly over the pastry cups.
• Add about 1-2 tsp of kimchi to each cup and top with two cubes of feta.
• Bake in the oven for 10-15 minutes until the pastry is golden and puffy and the feta is melted. Serve hot.
