CHICKEN BURGER
WITH KIMCHI

Ever thought to add Kimchi to your chicken burger? It’s a winner!

INGREDIENTS FOR BURGERS
2 large free-range chicken breast fillets
1 tablespoon of sesame oil
1 carrot in julienne strips
½ shredded onion
2 teaspoons caster sugar
2 teaspoons rice vinegar
Pinch of salt
1 garlic clove, crushed
Lettuce leaves
4 tablespoons regular mayonnaise
4 brioche burger buns
1 cup Living Goodness Sum Yum Kimchi

INGREDIENTS FOR MARINADE
½ cup Korean red pepper powder (Gu Choung)
¼ cup water + 1 tablespoon extra
¼ cup fish sauce
2 tablespoons rice vinegar
1 tablespoon sugar
1 teaspoon kosher salt
1 teaspoon sesame oil
1 teaspoon sesame seeds

METHOD
• Preheat the oven to 180 degrees.
Mix all the marinade ingredients together.
• In a small bowl mix 2 x tablespoons of the marinade to the mayonnaise and set aside.
• Slice each chicken breast in half flat to cook evenly (use a meat pounder to flatten if necessary). Transfer to a plate.
• Coat both sides of each piece of chicken with the spicy marinade.
• Heat the remaining oil in a non-stick pan and fry the chicken for 5 minutes each side until golden and cooked through. Set aside. 
• Place buns in oven.
• While the chicken rests, combine the sugar, rice vinegar, chopped coriander, garlic and salt until well mixed and the sugar has dissolved.
• Add carrot and onion to a bowl and toss through the dressing.

TO SERVE
• Slice buns open and spread the mayonnaise on the bottom half of each bun, then top with the chicken, a portion of the carrot and onion salad, lettuce, ¼ cup kimchi, a bit more mayonnaise and sprinkle with coriander leaves. Enjoy!
