RUSSIAN DRESSED REUBEN SANDWICH

A Reuben with the perfect balance of dense rye bread, melted Swiss cheese, tangy sauerkraut, tender corned beef, slathered with a spicy Russian dressing. Delicious!

INGREDIENTS FOR REUBEN
1 x loaf of rye bread (or similar)
8 x slices of corned beef (or pastrami)
8 x slices of Swiss cheese
½ cup Living Goodness Sassy Sauerkraut

INGREDIENTS FOR RUSSIAN DRESSING
½ cup mayonnaise
3 tablespoons of ketchup-style chili sauce
1 teaspoon prepared horseradish
½ teaspoon Worcestershire sauce
½ teaspoon smoked paprika
½ teaspoon kosher salt
¼ teaspoon dry mustard
¼ teaspoon freshly ground black pepper

INGREDIENTS FOR CORNED BEEF
½ cup mayonnaise
3 tablespoons of ketchup-style chili sauce
1 teaspoon prepared horseradish
½ teaspoon Worcestershire sauce
½ teaspoon smoked paprika
½ teaspoon kosher salt
¼ teaspoon dry mustard
¼ teaspoon freshly ground black pepper

METHOD FOR CORNED BEEF
• Place all the ingredients in a large saucepan and top with water. 
• Bring to the boil and gently simmer for an hour. 
• Allow to cool and then slice thinly on a board.  
• Place in fridge until ready to use.

METHOD FOR RUSSIAN DRESSING
Place all Russian dressing ingredients into a medium bowl and stir to combine, refrigerate until ready to use.

METHOD FOR REUBEN SANDWICH
Slice of bread to a medium thickness and butter on one side
Flip the bread over and on four slices, add a layer of Russian dressing, a few slices of the corned beef, one slice of Swiss cheese, a good helping of Sassy Sauerkraut followed by another slice of the cheese. 
Top with the remaining bread slices and grill for approximately 10 minutes, or until golden and the cheese has melted. Can also pan fry if you don’t have a grill.
