SOBA NOODLE SALAD (VG)

A fast and easy, delicious and nutritious soba noodle salad. The perfect lunch to take to work, or light summer meal.

INGREDIENTS FOR SALAD
320g (4 bunches) Soba noodles
¾ cup Living Goodness Super Superkraut
1 cucumber (peeled and seeds scooped out)
1 green chilli (or extra if you like more spice)
2 tablespoons of Sesame seeds (toasted)
Thinly sliced nori sheets for topping
Chilli flakes for topping (optional)

INGREDIENTS FOR DRESSING
1 tablespoon sesame oil (+ extra for drizzling)
2 tablespoons of soy sauce (+ extra for drizzling)
1 tablespoon of sake or mirin
1 tablespoon of rice wine vinegar 
1 tablespoon of maple syrup 
Juice from 3 limes
2 tablespoon of sriracha 
1 tablespoon Kewpie mayo (or vegan mayo)

METHOD
• Combine the dressing ingredients in a small bowl and mix.
• Cook soba noodles as per packet instructions. 
• Drain and toss through a light drizzle of sesame oil and soy sauce to avoid the noodles sticking together.
• Combine the noodles with the Super Superkraut, cucumber, green chilli, and sesame seeds. 
• Toss through the dressing.

Serve topped with thinly sliced nori sheets and chilli flakes (optional), alongside your choice of protein (e.g. chicken or tofu), or simply enjoy on its own with extra sauerkraut.
