VEGAN CHICKPEA SMASH SANDWICH
A deliciously healthy sandwich with chickpeas that are a rich source of vitamins, minerals, fiber, and packed full of protein.

INGREDIENTS FOR CHICKPEAS
½ can chickpeas
1 tablespoon water
¾ tablespoon lemon juice
2 teaspoons minced garlic
2 teaspoons Dijon mustard
1 teaspoon pure maple syrup
¼ - ½ finely chopped onion
Several slices finely chopped cucumber
¼ teaspoon coriander flakes
¼ teaspoon paprika salt and pepper
INGREDIENTS FOR SANDWICH
2 thick slices sourdough bread
Living Goodness Heartbeet Kraut
Avocado
Cucumber
Sprouts
Salt and pepper
METHOD
• Drain and rinse chickpeas.
• Remove the skins (optional, takes a long time but worth it!)
• Mash the chickpeas with a fork or potato masher until roughly smashed, but still leaving some chickpeas whole.
• Mix in the other chickpea smash ingredients well, adding salt and pepper to taste then set aside.
• Slice your sourdough and lay out.
• Mash some slices of avocado and add a dip of lemon juice and a little black pepper.
• Spread the avocado on the bread.
• Layer with Heartbeet Kraut, the chickpea smash, sliced cucumber and sprouts and finish off with a little salt and pepper.
• Close off your sandwich, and enjoy!
