VEGAN KIMCHI SPAGHETTI

How about putting a twist on a classic? This kimchi spaghetti is an ultra-easy dish of kimchi coconut dip tossed with cooked pasta, the alchemy that turns kimchi coconut dip and pasta water into creamy sauce. It’s going to be your new favourite weeknight dinner!

INGREDIENTS
200g spaghetti pasta
½ cup Living Goodness Kimchi and Coconut Dip
Spring onion, chopped
Toasted sesame seeds

METHOD
• Bring a big pot of water to the boil.
• Once the water comes to a hard boil add salt (roughly ¾ teaspoon of fine sea salt per 1 litre).
• Cook pasta according to packet instructions. Pasta must be
cooked al-dente.
• Save ½ cup of pasta water and set aside.
• Combine pasta with kimchi coconut dip, adding the pasta water little by little, mixing pasta gently using a tongs until you get nice and luscious pasta sauce.

TO SERVE
• Serve the pasta immediately, sprinkle with spring onion and toasted sesame seeds.
