VEGAN TOASTIE WITH GARLIC MUSHROOMS (VEGAN)

INGREDIENTS FOR MUSHROOMS
5-6 large button mushrooms
1 tablespoon of vegan butter or Olivani
½ small onion, finely diced
1 tablespoon minced garlic
1 tablespoon finely chopped fresh parsley
½ teaspoon thyme
Salt and pepper
INGREDIENTS FOR SANDWICH
2 thick slices sourdough bread
Living Goodness Super Superkraut
Vegan butter or Olivani
Fresh spinach
Vegan cheese
Tomato
Salt and pepper
METHOD
• Heat the vegan butter in a pan.
• Slice your mushrooms and onion, add to the hot pan with the onion and sauté until lightly browned.
• Add in the remaining mushroom ingredients and mix, continue cooking for another few minutes until fragrant and nicely cooked. Set aside.
• Spread vegan butter on the outside of your sliced sourdough (the side that will touch the pan, not the fillings).
• Layer with fresh spinach, mushrooms and slice of vegan cheese.
• Heat a pan, and once hot, add your toastie. Cook until the bottom bread is nicely golden, then add in your tomato and Super Superkraut
before topping with the other slice of sourdough. Cook the other side under the grill or flip in the pan – by using the grill its less likely to fall apart!
• Once cheese is melted and the bread is golden and toasted, remove from the grill, allow to cool slightly.
