VEGAN TOFU SCRAMBLE WITH AVOCADO AND HEARTBEET KRAUT

The perfect Vegan breakfast of scrambled tofu that melts in your mouth with creamy avocado and Heartbeet Kraut served on healthy toasted brown bread.

INGREDIENTS FOR SCRAMBLED TOFU
300g silken tofu
1 teaspoon nutritional yeast
½ teaspoon maple syrup
Pinch of kala namak, Indian black salt
1 teaspoon tamari sauce
1 teaspoon turmeric powder
Pinch of garlic powder
1 teaspoon coconut oil

OTHER INGREDIENTS
2 slices of toast
1 ripe avocado, peeled, pitted and sliced
½ cup Living Goodness Heartbeet Kraut
1 teaspoon nutritional yeast
1 tablespoon finely chopped chives

METHOD
• Place silken tofu in the mixing bowl. Sprinkle with Indian black salt, nutritional yeast, garlic powder, turmeric powder. Drizzle with tamari and maple syrup. Mix it well using the fork to create pale yellow crumbles. Turmeric will give tofu a vibrant yellow color after heating.
• Set the skillet over medium heat and add the coconut oil. Cook tofu and stir it occasionally using a silicone spatula till almost all liquid evaporated and tofu gets a nice rich taste and color.

TO SERVE
• Place scrambled tofu on the browned toast. Serve it with avocado and Heartbeet Kraut. Sprinkle with chives and nutritional yeast for extra cheesy taste. Serve straight away.
