Summer is finally here, and with that and the silly season upon us there is one thing everyone across the country needs to plan for: dishes the whole family will love.
More than that, a lot of us are also looking at ways we can make these meals healthier as the nations intake of chocolates and pudding rapidly increases.
Well, here at Living Goodness, we’re always huge fans of a nutritious and tasty summer dish that everyone can enjoy - especially if it’s followed by a tasty pavlova ;)
1. When you’ve got a lot of leftovers: The Buddha Bowl
We’ve all been there - you over-catered for your holiday event and the next day you’re staring at a fridge full of food that needs to be eaten. Enter, the Buddha Bowl! Buddha Bowls, nourish bowls, bibimbap, and poké bowls are all similar dishes (depending on how you prepare them) and are great dishes for those moments in life where you have an abundance of groceries that just don’t seem to go together.

2. When you’ve got to feed the masses: The Potato Salad
We’ve never met a person who doesn’t like potato salad, and we’re hoping we never do! This quick and easy dish is quite the crowd pleaser, and more importantly can be made in gigantic quantities for when your long lost extended family drop by unannounced…

3. When you’re surrounded by picky eaters: The Humble Taco
Tacos are almost the perfect dish for feeding picky eaters in our eyes. They can be spicy or mild. They can be vegetarian or packed with meat. They can have all your favourite toppings or just a whole lotta cheese. When you’re not sure how you’re going to make everyone happy at meal time, opt for the humble taco, and then prepare a variety of toppings so everyone can build their perfect taco!

4. When you’re firing up the barbeque: Spicy Sliders
Sliders are one of those dishes that seemed to come out of nowhere and take the internet by storm. By now they’re here to stay, and for good reason! These bite-sized burgers are a fantastic way to feed a large group with little stress.

5. When you miss the taste of healthy food: Japanese Salmon & Vegetables
We get it - sometimes you can only have so many fruit mince pies before your mouth starts watering at the thought of any kind of fresh vegetable. Keep things fresh and interesting - but still healthy - by putting a Japanese twist on the normal fish and vege dish. Adding soy sauce, seaweed, and edamame beans can transform a plain dish into something with a little zing!

6. When you’re running out of ideas: The Simple Quesadilla
We’re all running out of ideas by this point, and sometimes you need something that only needs a handful of ingredients, and very little skill. Almost nothing is simpler than the quesadilla, and if it is it wouldn’t taste half as good! We love that the quesadilla only has two main ingredients (tortilla and cheese) and everything else is optional!
